Dairy Free/Grain Free Creamy Chicken Mushroom Penne

  • 1 large skillet


  • 2 cups grilled chicken chopped
  • 3 tbsp palm shortening nutiva brand
  • 1 shallot or small red onion minced
  • 8 oz sliced mushrooms
  • 1 tbsp cassava flour
  • 1/2 cup coconut cream cream portion of chilled canned coconut milk
  • 1 cup bone broth
  • 1/4 cup parsley chopped
  • 1 box jovial penne


  • Cook jovial penne pasta according to directions.
  • Add palm shortening, minced shallot and mushrooms to large skillet on medium heat. Saute for 5 minutes while stirring.
  • Sprinkle cassava flour over mushrooms and sauté for another minute.
  • Stir in coconut cream, bone broth, and parsley. Allow to cook for about 5 more minutes or until mushrooms are tender and sauce is thickened.
  • Add in grilled chicken.
  • Stir in pasta and serve warm.
