Dairy Free/Grain Free Creamy Chicken Mushroom Penne
- 1 large skillet
- 2 cups grilled chicken chopped
- 3 tbsp palm shortening nutiva brand
- 1 shallot or small red onion minced
- 8 oz sliced mushrooms
- 1 tbsp cassava flour
- 1/2 cup coconut cream cream portion of chilled canned coconut milk
- 1 cup bone broth
- 1/4 cup parsley chopped
- 1 box jovial penne
- Cook jovial penne pasta according to directions.
- Add palm shortening, minced shallot and mushrooms to large skillet on medium heat. Saute for 5 minutes while stirring.
- Sprinkle cassava flour over mushrooms and sauté for another minute.
- Stir in coconut cream, bone broth, and parsley. Allow to cook for about 5 more minutes or until mushrooms are tender and sauce is thickened.
- Add in grilled chicken.
- Stir in pasta and serve warm.
