Sourdough Discard Banana Bread (Dairy Free)

- 3 extra ripe bananas medium
- 1 egg
- 1 tsp vanilla
- 80 g dairy free butter melted miyokos, kite hill, etc
- 100 g sourdough starter discard
- 200 g unbleached flour all purpose
- 2 tsp baking powder aluminum free
- 100 g coconut sugar
Preheat Oven to 350˚F
Mash bananas with a fork until they are smooth and mix in vanilla
Beat the egg and add in with mashed banana mixture
mix in melted butter to banana mixture
Add the sourdough discard to the banana mixture and mix together
In a clean bowl, mix all the dry ingredients together
Add the banana mixture (wet) to the flour mixture (dry) and stir until combined.
Pour into a greased loaf tin and bake at 350˚F for 1 hr or until a toothpick comes out clean
Let bread rest for 30min before removing from tin.
