Dragonfruit Protein Smoothie Bowl

INGREDIENTS

Smoothie

  • 1 frozen dragonfruit smoothie pack (you can find them in the frozen fruit section at whole foods and other grocery stores)
  • 1 small banana
  • 1 small orange
  • 5 strawberries
  • 1 handful blueberries
  • 1 handful spinach
  • 1 handful kale
  • OPTIONAL: frozen berry/green mix and use 1/4 cup orange and/or pineapple juice along with dragonfruit smoothie pack
  • 1 scoop vital proteins collagen peptides

Toppings

  • Strawberries
  • Blueberries
  • Kiwi
  • Banana
  • Bare ginger coconut chips

INSTRUCTIONS

  1. Place all smoothie ingredients into high powered blender and blend until smooth. (You may need to scrape down ingredients as you blend in order to incorporate them and obtain smooth texture)
  2. Once you have a smooth mixture, add 1 scoop of preferred protein powder.
  3. Pour into bowl and top with your choice of toppings.
  4. ENJOY yourself or share with someone you love!

Friday Favs: Miss K’s Favorite Dairy Free Summertime Popsicle Treats

You must always have some cold treats ready here in Texas…it might be 49 at 6am and 90 by 6pm…I guess Texas weather could be likened to a toddler, you just never know what you’re gonna get. Miss K has a dairy and soy allergy and I follow a Paleo diet, so we are always on the lookout for dairy free/all-natural items to throw in the mix. The heatwaves are coming to Texas so we are gearing up and have been able to find some good options at Thrive Market, Whole Foods and H-E-B because let’s just face it…sometimes you don’t have time or feel like being Betty Crocker!

Paleo Salmon Cakes

Paleo Salmon Cakes

Ingredients

  • 3-6 oz cans of Boneless and Skinless Salmon drained
  • 1 onion diced
  • 2 ribs of celery diced
  • 1 tbsp old bay seasoning (1/2 tbsp celery salt, 1 tsp paprika, 3/4  tsp black pepper, 1/2 tsp ground mustard, 1/8 tsp allspice, pinch cayenne, pinch cinnamon, pinch nutmeg, pinch ginger)
  • 2 tbsp dried dill
  • 1 tsp pepper
  • 3/4 tsp sea salt
  • 1 lemon zested and juiced
  • 4 1/2 tbsp coconut flour
  • 6 large eggs
  • coconut oil

Instructions

  • In a bowl break the salmon up with a fork and add the ingredients up to coconut flour.
  • Mix in the coconut flour and combine thoroughly.
  • Next add in the eggs and mix for thoroughly until combined.
  • Heat coconut oil on medium high in a large skillet.
  • Shape the mixture in to patties, roughly 2″ wide.
  • Add the patties to your pan and cook until the sides are golden brown, roughly 5 – 8 minutes on each side. DO NOT flip the salmon cakes until they are golden brown or they will fall apart.  You need the side to completely brown so it will hold together.
  • Enjoy!

***I like to triple the recipe to have extra for freezing.  These freeze and warm up well for a quick dinner or snack.
***I like to use wild alaskan salmon…you can use a salmon of your choice, just be sure to read ingredients as popular brands do sometimes contain soy.

Back to the Compound we Go

After almost a week…wow, it feels so weird saying I was gone from the homestead for that long…I haven’t been gone more than a few hours/days in years…but I am back!  Back to the screaming, tantrums, what will we eat, “I need you mommy” and all the other nuances and excitement that occur on a daily basis.  I will have to admit it was nice taking a shower by myself…well, with only two little eyes peering at me, and getting dressed, yes fully dressed on my own without a nurse, husband, or the words “use the call button if you need help”, or a shower seat that only half of each cheek fit on.  All comedy aside, the nurses and staff were phenomenal and my husband did an absolutely amazing job taking care of our precious toddler, 12 chicks (who grew so much while I was away), a lazy dog and the compound! We did have some amazing friends and family there to help and I am eternally grateful to know if something ever happens to me, my family would be well taken care of in my absence! #trulyblessed

Perfect Marriage Sign 

I was so happy to hear that my outspoken toddler gave our “Chosen Sisters” an anatomy lesson after leaving Walmart with her new doll in tow. The anatomy professor promptly undressed the doll and emphatically said “dolly’s tinkle comes out her vagina and her poop comes out her rear.”  So wonderful to know how comfortable she is with bodily functions and names!  During my hiatus, she fed birds and played at the park with her DeDe, took full advantage of Nettie and of course was SPOILED ROTTEN by everyone!  She had such a wonderful time, she didn’t want to come home!  Yesterday, I was treated to my sweet girl wanting to snuggle and keep close tabs on me.  Such a beautiful reminder that even though she may not always show her love for me; when she is sick, or I am absent, her true feelings and needs trump the little attitude she showers me with on a daily basis.

It was so refreshing to hear the daily struggles with our “little heathen” from my husbands perspective especially since typically…mommy is just impatient, tired, or being too hard on the princess.  Now the back story to this was the time I called her an “asshole” and my sensitive, loving, wonderful husband took offense to this statement and I may or may not have been in real trouble for a week or more.  Now, don’t get me wrong, I love having the privilege of staying at home with our little one, but that does not make it easy.  I believe there will always be struggles whether you are a working or SAHM…most days I take the good with the frustrating and choose to reflect at the end of each day on our journey with a little humor and a whole lot of prayer.  It is so good to be home to experience all of the joy and frustration the day has to offer, or maybe its just good to be outside the four walls of a hospital…not sure which yet…just kidding!

Now that I am home, I realize I had gotten a little bit behind/lazy about having quick items in the freezer to heat up and serve when needed.  I have a few go to menu items for this purpose that are filling, quick, healthy and allow my little one to be involved…keeping her engaged and busy is vital in order to get things done and the best part is she learns new skills too!
