Dairy Free, Grain Free, Yeast Free Paleo Orange Cranberry Rolls

Ingredients

Dough

  • 3 cups almond flour
  • 1/4 cup coconut flour
  • 1 1/2 tsp xanthum gum
  • 1 tsp orange zest
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 teaspoon finely ground sea salt
  • 1 scoop collagen peptides
  • 1/2 cup full fat coconut milk
  • 1/4 cup orange juice
  • 2 eggs
  • 1/4 cup honey
  • 1/4 cup liquid coconut oil
  • 2 Tbsp vanilla

Filling

  • 1 8oz bag cranberries
  • 1/3 cup orange juice
  • 1/4 cup maple sugar
  • 1/4 cup honey
  • 1 tsp vanilla

Icing

  • 1 cup coconut oil (solid)
  • 1 tsp fresh orange juice
  • 1/2 cup honey
  • 2 tsp orange zest
  • 2 tsp vanilla

Instructions

  1. Combine cranberries, orange juice, maple sugar, honey, and vanilla in medium saucepan and simmer over medium/high heat until thickened like jam.  Set aside to “cool”.
  2. Combine almond flour, xanthum gum, orange zest, baking soda, along with salt in medium bowl.
  3. In small bowl whisk together coconut milk, orange juice and collagen peptides.
  4. Add eggs, honey, coconut oil and vanilla to milk mixture and whisk until thoroughly combined.
  5. Combine wet ingredients with dry until smooth, doughy mixture forms.
  6. Place in refrigerator for about 20-30 min to chill dough.
  7. Once dough is chilled and most of the “stickiness” is gone, place between two sheets of parchment paper and roll into a rectangle about 1/8″-1/4″ thick.
  8. Remove top piece of parchment paper and discard.
  9. Spread Orange Cranberry Jam over dough being sure to leave about 1′ around the edges “clean”.
  10. Roll into a dough log starting on one of the short sides and using parchment paper to keep tight and from sticking.
  11. Place dough log in freezer for about 45min-1hr or overnight if desired.
  12. Preheat oven to 350℉.
  13. Remove from freezer and cut into 1″ discs and place on parchment paper lined baking sheet.
  14. Place in oven and bake for 30-35 min or until golden brown.
  15. In a medium bowl blend together icing: coconut oil, orange juice, honey, and vanilla until fluffy and smooth and set aside.
  16. Remove rolls from oven, ice and serve.
  17. Enjoy!

Ingredients

Instructions

  1. Preheat oven to 350°F
  2. Combine almond flour, baking soda along with salt in medium bowl.
  3. In small bowl whisk together coconut milk and collagen peptides.
  4. Add eggs, honey, coconut oil and vanilla to milk mixture and whisk until thoroughly combined.
  5. Combine wet ingredients with dry until smooth mixture forms.
  6. Fold in blueberries with spatula or spoon.
  7. Spoon batter into greased muffin tin or silicone/paper muffin cups filling about 3/4 full.
  8. Lightly dust top of each muffin with maple sugar.
  9. Place in oven for 50-60 min or until center is set and lightly browned.
  10. Enjoy!

Friday Favorites

This week seemed to really fly by quicker than expected. We were quite busy with activities and such which always make time go by quickly.

  1. The Bob-I am really enjoying the new do especially in this 100+ heat we are having right now.
  2. Vox article-If your wondering why you’ve lost friends into adulthood. Let’s just say it has to do with prioritizing those you want to be close with among other things…The Golden Rule!
  3. Señor Veggie-This place is a little gem a friend of Miss K and I introduced us to. I am not vegan and I love me some meat, but let me tell you this place was delicious! I should have taken a photo of the jackfruit mole tacos I ordered, but this one from their Facebook looks identical. This experience has inspired me to start experimenting with jackfruit as I had NEVER had it before and was blown away! Anyway if you are in San Antonio this is a GREAT vegan Mexican restaurant.
  4. 30 Day Plank Challenge App-I decided to do 30 day challenge that would help strengthen my core and back and stumbled across this app. It’s a FREE app and has reminders as well as programs for all skill level! I started on Monday at the intermediate level 1 which seems to be a good fit for my current strength and fitness level.
  5. Moen Fixtures-THIS IS WINNING HERE, most Moen sink faucets, bath tub fixtures etc have a lifetime parts warranty on them so if the hose springs a leak or a seal breaks, you just call (1-800-BUY-MOEN) and they send the part needed out to you FREE! I had two faucets that had leaks in the pullout hose this week that needed repair so I called customer service up Monday and had the two hoses Wednesday to fix the faucets! Now that’s what I call EXCEPTIONAL Customer Service.

Friday Favorites and a Book Giveaway

I wanted to start off today’s favorites with a neat/uplifting/inspiring story of selflessness/compassion/generosity of one young mans huge heart and a pig named Roo….this tugged at my heart for so many reasons (I raised pigs for 13 yrs as a young girl, cancer, toddlers, and compassion of others in this world). Fuse Lenses-I have to admit I am a frugal gal and when it comes to sunglasses, I like nice ones, but only buy a pair every 5-10 yrs so when I came across this company I was stoked! They make lenses for name brand glasses and have FREE shipping, polarized/non lenses as well as prescription lenses. The quality is awesome and they arrive within 3-5 days of ordering. My Ralph Lauren aviator glasses are about 5 years old and Miss K has had a field day with them so I was peaking through scratches but didn’t want to spend the $$ on a new pair so I ordered in the fuse lenses and they are like new again!

Culinaria SA Restaurant Week-Happening NOW in San Antonio…it was started as a way of celebrating local, exceptional chefs and restaurants. Through sponsored culinary events, they serve as one of the leading food-focused nonprofits in the San Antonio area, providing funds for scholarship programs aimed at students pursuing a career in the hospitality or culinary industry.

Barefoot Blonde Blog– Amber Fillerup Clark is a wife, Mama and business women who shares daily thoughts, hair tutorials, travel tips and style advice.  She just posted a few blogs on starting your own blog/advice on how to blog etc.  I enjoy following along in her journeys of life, travel and parenting each week.

Yoga at the Pearl by Yoga Day-This nonprofit organization does great work in so many communities across the city and offers TWO FREE classes a week to ANYONE!!!!  I have been attending one of those every Saturday morning down at The Pearl Brewery for the past few months and it has been a great “time out/alone time” to feel present and relax my mind while rejuvenating myself/body.  They hold a FREE class every Saturday Morning At the Pearl Brewery in front of Local Coffee from 9:30am-10:30am and another FREE class at The Tea Gardens on Sunday from 5:00pm-6:00pm.  Hope to see you there sometime!

Paleo Peach Cobbler

Ingredients

Instructions

Filling

  1. Preheat oven to 350°F
  2. Place peaches in medium saucepan and squeeze lemon juice over peaches. Allow to sit 15 minutes.
  3. Combine water, arrowroot flour, and vanilla and pour over peaches along with sugar and bring to boil stirring occasionally until peaches become soft…approximately 10-15 min.

Crust

  1. While peaches are boiling, place palm shortening in an 8″x8″ baking dish and allow to melt in preheated oven.
  2. Combine cassava flour, sugar, baking powder, and cinnamon in a medium mixing bowl.
  3. Mix milk and vanilla with flour mixture and pour over “hot” melted palm shortening.
  4. Spoon in peaches evenly on top and place in the oven for 45min or until crust is golden brown.
  5. Optional: Sprinkle a little more sugar on top about 5 minutes before pulling out of the oven.
  6. Enjoy with some vanilla ice cream or by itself!
